Lunch Recipe: Sweet And Sour Romaine Salad

Soon the weather is going to be hitting triple digits around the U.S. I know during this time I'm always looking for ways to make cool meals that don't take a lot of time in the kitchen. Large salad, like the Sweet and Sour Romaine salad, are always on the menu in our home.

So how do you make a Sweet and Sour Romaine Salad? The dressing is a light red wine vinegar which blends really well with the blue cheese and strawberries that are in the recipe.

Dressing:
1 cup canola oil
1 cup sugar
1/2 cup red wine vinegar
Salt and pepper to your preference

Blend all ingredients together with a whisk until sugar is disolved.

Salad:
1 head of romaine lettuce, chopped
1 cup sliced strawberries
4 green onions diced
1/2 cup walnuts, coarsely chopped
1/2 cup crumbled blue cheese
1/2 - 3/4 cup of the dressing

Toss all ingredients together in a large bowl and serve.
