Chicken in peanut sauce (EMT cookbook)

Do you know what's for Dinner? Are you looking for a new chicken breast recipe. I love taking this to work and sharing it with fellow EMT and Paramedics. The Chicken recipe works really well when you put the recipe on skewers. Our family is always looking for new healthy recipes for dinner. The chicken in spicy peanut sauce is a mixture of the classic chicken breast and Indonesian spicy peanut sauce. 

What you will need to make this chicken breast recipe:
1 TBSP dark brown sugar
1/4 cup plus 2 tablespoons of creamy peanut butter
1 tablespoons of toasted sesame oil
1/4 cup of low sodium soy sauce
1 tablespoon of sriracha sauce
1 tablespoon of rice vinegar
1/4 cup of warm water
1 tablespoon of freshly squeezed lime juice
4-6 thin cut boneless skinless chicken breasts

Preheat broiler, Line a sheet pan with foil

Whisk together the brown sugar, peanut butter, sesame oil, soy sauce, sriracha, vinegar, water and lime juice. Set aside 1/4 cup of the peanut sauce.

Brush chicken with remaining sauce so that the chicken is coated. Place on the waiting pan. Broil until the chicken is just cooked through. This will usually take 10 to 12 minutes.
