Diabetic Medic chowing down at Cooper's

Are you asking yourself "Where is there a good Bar B Que restaurant near me?" Old Time Pit Bar B Que claims that it's all about the meat. The restaurant does have the largest pit that I have seen. Can it hold up to the taste test. Our friends and family decided to try it out.

Located a short drive from downtown Fort Worth, this Cooper's location is host to thousands of Fort Worth Stockyard fans and tourist each year. Mr. Cooper has been doing bar b que since the 1950's. It's a nice large casual location family and friends to meet. The building and area is nice but how is the customer service.

Food review:
Cooper's has over twelve meat choices, seven side choices, and four different cobblers. I dug into the beef brisket, bake potato, grilled corn, and pecan cobbler. There's free beans, pickles, onions, extra sauce, sliced white bread, and pickled jalapenos at the table.

The beef brisket was so tender that you could cut it with a spoon. It's was so good, I wish I had ordered a half pound of it. The sauce is a sweet vinegar red sauce. Don't get me wrong. It's a nice sauce but I was looking for something more sweet and sticky. 

The grilled corn and potato was a little over peppered on the outside. Once you get past the pepper, both hold a great taste. Be prepare to be full at the end of your potato. They are huge. Plus they come with butter, cheese, bacon, and sour cream. Definitely not something to eat while your on a diet.

The pecan cobbler tasted more like pancakes with pecans in it. It's not something that I would go back for. Though I'm looking forward to trying their apple, blackberry, and peach cobbler.

Customer Service Review:
The staff treat you like family. They know that their customers are their business. When you spoil the customers, they'll definitely return if the food is good. The food is good.

Cleanliness:
Everything is kept clean and tidy. I just wish that the soap dispenser gave out a little more soap. I don't know why only one knob on the sink worked. I didn't like washing my hands with luke warm water. I figure it would be a nightmare for someone who just ate one of Cooper's chickens or beef ribs.

All in all it's a great Bar B Que restaurant near me. I'm glad that my cousin introduced us to it. Be sure to check back often, I'm hoping to review one meat selection and cobbler selection at the end of the month.

Crushing those carbohydrate cravings

It's another day of striving towards a healthy lifestyle. Now that I have gotten over the shock of the fact that I have Diabetes, things have started to move towards a better life. I really thought that I would have cravings for bread, pasta, and rice. With a little self talk on how large amounts of these things are death to me, I don't seem to want them.
So what have I been using as side dishes? I hate to say it but there are so many different foods out there, a person just has to try to find things that they like. Here are some of my favorites

  • Spinach, Tomato, String Cheese Salad with a home made dressing
  • Spinach, Avocado, Pico De Gallo Salad
  • Steamed Spinach
  • Steamed greens with pine nuts
  • Steamed greens with sliced nuts
  • Kitchen Sink Salad
  • Grilled Mushrooms drizzled with olive oil
  • Asian Salad of Broccoli, Carrots, Onions, Mayo, and Raisins
  • Cucumbers, Carrots, and Onions marinated in vinegar
  • Fake Mash Potatoes - Cali-flower steamed/Mashed mixed with low fat sour cream
  • Black Beans
  • Lettuce Wraps - Dice vegetables mixed with low fat sour cream wrapped in lettuce leaves

Super Bowl Sunday Baked cheesy sweet onion dip

Super Bowl 2015 will soon be here. It's three months and counting. I'll still be in my studio apartment this Super Bowl season. I can't wait till Super Bowl 2016 though! The excitement of preparing goodies and drinks for people to enjoy. 

I can honestly say that being a hostess is one of the things that really makes me the happiest. I love the fact that I can send my favorite guys and gals home with full bellies and smiles on their faces. One of the favorites for snack time as been Kroger's baked cheesy sweet onion dip. It's a dip that brings the taste of sweetness, earthiness, and tang.

1 cup of low fat mayonnaise
1 cup sweet onion, chopped (yellow and red onions work)
1 Tablespoon grated Parmesan cheese
1/4 tsp minced garlic
1 cup shredded Swiss Cheese
1 tsp chopped Fresh Parsley

In a large bowl, combine the mayonnaise, onion, and Parmesan cheese. Spoon into a quart baking dish. Bake uncovered at 325 degrees for forty minutes. Serve into a fondue pot with your favorite bread or crackers.

If your having a large party like Super Bowl Sunday, you might want to make a casserole dish of the dip and keep it warm in the oven.

Weight Loss 366+ Healthy Meals on my weight loss journey

The days have been hit and miss when it comes to my weight loss journey in Fort Worth, Texas. The start of rain and the onslaught of a cold has brought exercise to a halt. It has been really difficult for me to get my heart rate up when it's hard for me to breath.

I haven't been very hungry so my eating has been light. I don't know if it's the lack of food/glucose or the cold medication that is making me feel like I'm dizzy. No matter how I try to eat something, it sits heavy on my stomach.

What did I eat today on today's weight loss journey?

Chocolate protean shake with 2 glasses of milk
Bowl of tomato soup with 5 crackers
5 pork spare ribs with BBQ sauce and 1/2 cup of spinach

I know I should have had more vegetables and fruits. When your mouth hurts from the sinus pressure, you don't want to eat anything.

Healthy meals on a weight loss journey

Nothing really to talk about today. I usually like to write about my feelings on a different blog post anyways. What did I eat that was healthy on todays weight loss journey? Take a look at my list and you can decide. I hope that my daily list will give you an idea about things that you can add to your eating program.

Diabetic Medic tries Seapoint Farms Dry Roasted Edamame

As a Diabetic and someone who is trying to lose weight, I'm always trying to find snacks that offer some extra punch. Sure I want to eat something that will kill a craving but I also want food that will keep my blood sugar low. I decided to try Seapoint Farms Dry Roasted Edamame.

The product boast:
  • Healthy snack for the whole family
  • Gluten Free
  • High Protean
  • 70% less fat than peanuts
  • 40% more protean than peanuts
  • 0 Trans Fat
I would hope that this weight loss snack is gluten free. Most products should be Gluten free due to the high chance on anaphylaxis shock. So be sure that your body can handle legumes and soy beans before you dive into this snack.

Sadly, I hope that you don't dive into Seapont Farms Dry Roasted Edamame. The dry roasting makes the Edamame really hard to chew. Have you ever under cooked pinto beans when making spicy frijoles? That's what the taste is like. The crunch is like under cooked pinto beans but the taste is burnt.

So for a snack while I'm on my journey of healthy eating, I'll stick to steam Edamame. Or perhaps there is another Seapoint Farms product that I can try.

LEO and Medics are not stupid

I'll admit that some of us do some crazy things. Take for instance my friend who is part of the Fort Worth Fire Department. He's got a heart of gold but he's hyperactive as hell. Sometimes his brothers and sisters have to reign him in. It just goes to show that we are all human.

One thing we are not is stupid.

Did you know that there are 680,000 Police Officers in the United States. 50% of them have graduated from High School and earned an Associate Degree. 36% of our nations EMS system have Bachelor degrees or higher.

As for street smarts, we are constantly educating ourselves. Firearms classes, Self Defense, First Aid, Basic Life Support, Advance Life Support, Mental Health Education, and familiarity of street drugs.

Wait a minute that last selection didn't seem right. Police Officers and Medics are learning the names of street drugs. They are learning about what they look like. They are learning about how they affect the body.

We may be a little on the strange side personality wise. One thing for sure is that we are not stupid.

Paramedics loving Original Tommy's

Are you looking for a Burger Restaurant nearby? Located on the Hollywood strip is The Original Tommy's World Famous Burger Restaurant. The original recipe use to be just burgers and fries. The franchise has ranched out to offer a breakfast menu that includes that world famous chili.

Can I recommend this place as a good burger restaurant? The food is good. It's your typical breakfast, burger, and hot dog menu. The flavors seem to be the same at this franchise restaurant. If you don't have a strong stomach, I would suggest not to eat the chili and cheese. It's not that Original Tommy's World Famous Burgers do not have world famous chili. It tends to go straight through.

The problem with this restaurant is the location and the customers. Most of the
customers seem to be people who are high, coming down from a high, intoxicated or there
to just hang out. The owners and staff don't seem  to want to do anything about the issue.

To wrap up this restaurant review, if you looking for an inexpensive meal in Hollywood California, then this is the place. Just remember "Take Out Only"

Italian Recipes: Mantia's Italian Meatballs

Our family loves to give reviews of food products that we find at the local grocery store. Mantia's Italian meatballs claim that they have the perfect blend of seasoning. Is this the honest truth? Are these meatballs a good buy for the family budget?

Mantia's Italian meatballs are actually a good buy. Each meal made with them costs our family about seventy five cents a plate. The meatballs are actually a nice size and they smell great while cooking. The scent alone makes my family run to the dinner table.

Mantia's Italian meatballs are a mixture of beef and pork. They are versatile and can be used in a lot of recipes. I have been known to cook them up and use them as taco meat. I also have been known to cook them up and use them over home made pizza. They have a good flavor and the seasoning is not overpowering. 

Word of warning though, don't cool them and then use them in a salad recipe. They seem to get this greasy texture around the outside when they are cooled.

All in all Mantia's Italian meatballs do have just the right amount of seasoning. They offer a good product that can be used over again and not get boring.

Chilly Dilly Dip on Super Bowl Sunday

To go along with the spicy buffalo wings during Super Bowl Sunday, I like to put out things that will cool off the tongue. A favorite of my family and friends has been a Chilly Dilly Dip that I have been making for years. I personally like serving this favorite recipe with cut up vegetables. The Chilly Dilly Dip also goes great with whole grain crackers like Triskets.

 What you will need:
2 cups Fresh Dill
2 small garlic cloves minced
2 cups of low fat sour cream
2/3 cups of low fat mayonnaise
4 Tablespoons grated Parmesan Cheese
2 Tablespoons cider Vinegar
1/2 teaspoon fresh ground pepper
1/2 pound mushrooms, washed and sliced
2 Large cucumbers, julienned
4 red bell peppers, julienned
4 carrots, peeled and julienned
2 Yellow Squash, cut into thick rounds

In a food processor or blender combine dill, garlic, sour cream, mayonnaise, cheese, vinegar, and pepper. Blend/Process until smooth

Scrape into a serving bowl, cover and chill for 2 hours. Serve with all those yummy vegetables. Refrigerate any leftovers if their are leftovers.
